Apple & Carrot Protein Cups

Ingredients:

  • 1 scoop LeanFit Completegreen Protein powder
  • 1 tbsp. molasses or honey
  • 2 tbsp. cocoa powder
  • 3 cups rolled oats
  • 1 cup grated carrots
  • 1 cup grated apple (peeled)
  • 1/2 banana
  • 1/2 cup water
  • 1 Tbsp. shredded coconut
  • 1 tsp cinnamon
  • 1 tsp coconut oil
  • 1 Tbsp. baking soda
  • 1 Tbsp. baking powder
  • dash of salt

Instructions:

  1. Preheat oven to 350°F.
  2. Place all ingredients, except 2 cups of oats into the processor until combined.
  3. Place the mixture into a bowl and fold the 2 cups of oats into the mixture.
  4. Grease the muffin tray with oil.
  5. Fill the muffin molds to 3/4 full with the mixture.
  6. Bake in the middle of the oven for 30 minutes, or until done.
  7. Allow to cool before removing from molds

Tip: Keep the oatmeal cups in an air tight container. To enhance freshness, store in the refrigerator for up to one week.
