Birthday Cake Protein Fudge

No-bake Birthday Cake Protein Fudge bars with a deliciously chewy texture. These homemade protein bars are the perfect healthy birthday treat!

Birthday Cake Protein Fudge

Ingredients:

  • 4 scoops LeanFit Whey Vanilla
  • 1/2 cup coconut flour (ground coconut)
  • 1/3 cup oat flour (ground oats)
  • 2Tbsp Granulated xylitol (can sub any granulated sweeteners or omit)
  • 1/2 cup coconut butter ( can sub cashew butter)
  • 1/2 cup VitaFiber IMO syrup (can sub honey or maple syrup – macronutrients will change)
  • 1/4 cup + 1Tbsp coconut milk (can use more as needed)
  • 1/4 cup sprinkles

Instructions:

  1. Combine all dry ingredients in bowl and set aside.
  2. Melt coconut butter in saucepan; once melted add VitaFiber syrup and stir until combined.
  3. Pour coconut butter mixture into dry ingredients and add coconut milk, fold together with spatula until you need to use your hands to knead together (alternatively you can use food processor).
  4. At this point if your dough is crumbly add 1Tbsp of coconut milk at a time until you get firm dough.
  5. Add sprinkles and knead in.
  6. Line 8x8 dish with parchment paper and press dough down evenly.
  7. Place in fridge to harden for at least 30 minutes.
  8. Slice into bite size pieces of whatever serving size you prefer.
  9. Bring to room temperature when serving.

Tip: Alternatively you can slice into 12 protein bars for a complete snack.
