Chocolate Chickpea Protein Blondies

These Chocolate Chickpea Protein Blondies are a perfect snack for pre and post workout and a tasty dessert. Serve a scoop of nice-cream (vegan banana ice cream) for a super creamy and tasty texture in every bite!

Chocolate Chickpea Protein Blondies

Ingredients:

  • 1 can of chickpeas
  • 1/4 cup aquafaba (chickpea water in the can)
  • pinch of Himalayan salt (pink salt)
  • pinch of baking soda
  • pinch of baking powder
  • 5 tablespoons 100% maple syrup or honey
  • 2 teaspoons all natural vanilla extract
  • 1/2 cup all natural peanut butter (any nut butter will do)
  • 1 scoop LeanFit completegreen protein
  • 1 cup vegan chocolate chips

Instructions:

  1. Preheat oven to 350 degrees
  2. Blend or process all the ingredients except for the chocolate chips.
  3. Process on high until creamy and everything is blended
  4. Fold your chocolate chips into the batter using a spatula
  5. Prepare a square baking pan, lightly grease it with oil or line the tray with parchment paper.
  6. Bake at 350F for 20-25 minutes. Insert a toothpick into the blondies to come out clean.
  7. Let cool for 10 minutes. Slice it into squares and enjoy!
  8. Store in a air-tight closed container. Refrigerate.
