Grapefruit Protein Blondies

A punch of grapefruit, with a chewy and moist protein-packed texture. Try these with lemon or orange juice for the most perfect fruity flavour!

Grapefruit Protein Blondies

Ingredients:

  • 1 Cup oat flour
  • 1/2 Cup LeanFit Naturals Whey Vanilla
  • 1Tbsp VitaFiberIMO Powder
  • ¼ tsp pink Himalayan salt
  • 1 tsp baking powder
  • ½ Cup freshly squeezed grapefruit juice
  • 6 egg whites (1/2 cup liquid)
  • 1 Cup unsweetened applesauce

Instructions:

  1. Preheat oven to 350ºF.
  2. Grease 8×8 glass dish with coconut oil (or use parchment paper).
  3. In large bowl mix oat flour, whey protein powder, VitaFiber, salt and baking powder together.
  4. In separate medium bowl mix together grapefruit juice, egg whites, and applesauce.
  5. Add wet ingredients to dry ingredients and mix until well combined.
  6. Pour into prepared dish and bake for approximately 25 minutes.
  7. Cool and slice into 12 squares.

Tip: Any citrus juice, such as lemon, lime or pineapple will work
