Spook out these classic chocolate treats to create the ultimate Mummy Protein Brownie.

Sure to be an instant hit for your Halloween parties! Your guests won’t believe the amount of fruit, vegetables and protein found in each delicious bite.

Mummy Protein Brownies

Ingredients:

  • 1 cup yam or sweet potato, cooked
  • 1 ripe avocado
  • 1/2 cup applesauce
  • 2 eggs
  • ½ tsp pure vanilla extract
  • ¼ cup xylitol (or sweetener of choice)
  • ¾ cup LeanFit All-In-One (whey or plant based proteins will work too)
  • ½ cup cocoa powder
  • 1 Tbsp baking powder
  • Pinch Himalayan salt

“Mummy Effect” Frosting:

Instructions:

  1. Preheat oven to 375°F. Line 8x8 dish with parchment paper.
  2. Process sweet potato, avocado, applesauce, eggs, vanilla and xylitolin food processor until smooth.
  3. In large bowl combine protein powder, cocoa and baking powder. Addwet ingredients to dry and fold in until well incorporated.
  4. Pour into prepared dish and bake for 25-28 minutes.
  5. Let cool completely before frosting. Slice into 16 squares.
  6. For frosting, stir greek yogurt and protein powder until smooth.Spread over squares, poke 2 chocolate chips for eyes and place layers with coconut flakes to get mummy effect.
