Sunbutter & Jam Protein Sandwich

Ingredients:

Protein Bread

  • 2 scoops LeanFit Plain Whey Protein
  • 2 cups chickpea flour
  • 2 eggs
  • 1/4 cup olive oil
  • 1 cup water
  • 1 tsp baking powder
  • 1 tsp salt (optional)

Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix protein powder, chickpea flour, and baking powder in a medium bowl.
  3. Whisk in the eggs, olive oil, and water. Stir until just combined; do not over-stir.
  4. Pour into a loaf pan lined with parchment paper.
  5. Bake at 350 degrees for 45-60 minutes until the top is fully puffed up and golden brown.
  6. Loaf makes 10 slices of bread (5 servings.)

BlackBerry Chia Jam

  • 600 grams fresh or frozen berries
  • 1/3 cup chia seeds
  • 1/2 cup water

Instructions:

  1. In a small saucepan, add the berries and water.
  2. Bring the mixture to a gentle simmer on the stovetop, while mashing and stirring the berries.
  3. Allow to simmer until the mixture reduces.
  4. Stir in the chia seeds thoroughly, and remove from heat.
  5. Cover the pot with a lid and allow to come to room temperature.
  6. Pour jam into a jar and store in the refrigerator for up to one week. (Chill for 2 hours before serving.)

Tip: If the berries are fresh, freezing them first will allow for easier mashing.

Yield 2 slices of bread:
