Bacon Berry Breakfast Sandwich

A perfect sweet & savoury breakfast sandwich option, with half the calories of a fast-food chain and packed with protein!

Bacon Berry Breakfast Sandwich



Pancake Buns:


  • 1 egg
  • 1 strip turkey bacon
  • 1 tablespoon blueberries
  • ½ teaspoon Dijon mustard


  1. Spray a frying pan with oil and preheat on low setting.
  2. Mix all of the pancake bun ingredients in a mixing bowl.
  3. Spoon the mixture into the frying pan into two pancakes.
  4. While the pancakes are cooking, microwave the blueberries for about 45 seconds and mash with a fork when done.
  5. Flip the pancakes to cook the other side.
  6. When pancakes are done, place on a plate and fry the egg and bacon in the frying pan. This can also be done simultaneously in a separate frying pan.
  7. Place all the fillings inside the pancake buns and serve.
